Shun Knives by Kershaw are designed by Ken Onion, one of the worlds top knife designers. This Shun Ken Onion 3-piece set features our unique offset bolster design to fit your hand like a glove. The wider bolster is designed with contour curved thumb and forefinger rests to reduce tension while cutting. The extra curve on the blade allows for an easier flowing motion across the cutting board. You'll be slicing and carving like an expert with control and confidence. The knife is made of VG-10 steel and layered with 16 layers of high-carbon stainless steel on each side of the blade. During the finishing process the layers are exposed creating a beautiful pattern that not only protects the VG-10 core, it simultaneously creates a blade surface that resists food sticking to it, a real time-saver for kitchen prep. Combine all of these features with the sharpest Japanese edge available, and you have perfection. This set includes the following three Shun Ken Onion knives: 3-inch Paring knife DM0516, 4-inch Chef's knife DM0510 and the 7-inch Hollow-Ground Santoku knife DM0517. The first thing I do is: these are some very sharp knives. The blade is incredible, so much that I wanted to put on first, just so you should know. I was looking for some knives to complete my collection, and wanted most of the fine cut vegetables and fruit for garnish, and for the preparation of food generally does not require a giant chef's knife, work details . I really wanted to knives that were comfortable and perfectly balanced, and were sufficiently flexible for different types of tasks. After searching, I decided on these, because I liked the range of blades, and because I have been doing a lot of veggie heavy Asian dishes - these seemed perfect. And, they worked wonderfully, and have the balance and level of comfort that makes a whole bowl of carrots cut a pleasure, not a chore. And edges: so strong, and do not seem to lose sharpness again. In general, I am very happy with this series.

Shun makes the best kitchen knives that I've ever owned, bar none. Ken Onion designs are only very ergonomic and functional. They all come with a sharp edge right out of the box and are easy to re-Hone, with a few strokes on a steel (a steel Shun worth purchasing to accompany this set). The weight and balance of these knives are perfect, even the smallest, and profiles perfectly CHOP or slice through damn near anything (food, as in any case) with ease. I strongly recommend using a quality hardwood or bamboo cutting board to protect your investment. Courion or other hard substances are much harder on the edge of the blade, you resharpen much more often.
